Presentation of Rediviva by Eleni Psichouli

A cooperative restaurant in Tsinari, the most piqturesque part of Old Town, in Thessaloniki. Colourful, and full of fragrances from flowers and herbs, holding as an emblem a huble cuisine that is transformed in absolutely “haute cuisine” when you taste the magic trout, smoked by friends of the owenrs, in a very limited production. Vegetables and herbs are coming directly from the farm of the owners in Chortiatis, to be transformed into something else; zuchini flowers stuffed with rice and herbs, croquettes with cod and @@molocha@@, and @@ balls. Everything is turned into a chutney or a pickle, the chease is coming from Vlasti to fill in an ideal way the chachles, or add extra flavour to a lmb dish with herbs and feta chease. Exquisite kalamari stuffed with raisin and pine nut, veal tongue with lemon, ezme salad and dolmadakia. And for the end, there is panacota flavoured with mastic gum from Chios.
