At the foothills of Mt. Voras, in the crystal clear waters of Agathi spring, there is a trout farm run by our colleagues. They also have a small smoker facility, where they produce fresh smoked trout in a very slow process lasting 3 days! They use beech wood and aromatic herbs, with no preservatives or additives and thus their smoked trouts acquire exquisite aromas and flavors, without compensations on the dietary value of the fish itself.
We get the trouts whole, we warm them up for 2 minutes on the grill, in order to bring out their special aromas and then we serve them as fillets with organic extra virgin olive oil and lemon.
A simple and yet unique dish, with a complex and fine taste, rich in Omega-3 fatty acids.
